It is a good source of protein, carbohydrate, fiber, and, most notably, contains more micronutrients (iron and zinc) than other major cereals. It can be served as porridge or Kheer to six to eight-month-old babies and as cheela, dosa, and idlis for children above one year. It is also called as “Sanwa Rice’’ as it tastes almost similar to broken rice when cooked. Barnyard Millet is a true gift of nature to the modern diet and sedentary activities that can lead to many disorders in the body.
Usage :
Barnyard Millet relatively gets cooked faster and it takes less than thirty minutes to get soft tender texture. To get an enhanced earthen nutty flavor the Barnyard Millets can be roasted. It used in preparation of Kichadi along with the bunch of cooked vegetables and is ideally suited for making Tiffin items such as Dosas, Idlis and Upma. It is used for preparing a sweet delight called ‘’Kheer’’.
